Preparation

  1. Cut the tomatoes in half through the stem and squeeze them over a colander. Set in a bowl to capture the seeds. Remove the seeds from the colander, and place in a small dish until ready for use.
  2. Mix all the ingredients for the tahini together to form a paste. Pour into a small cast iron skillet, or small baking dish.
  3. In a pot, heat the oil to 180°C (360°F), and fry the cigars for 6 minutes. Remove them from oil, and drain on a plate lined with paper towels. Slice the cigars diagonally, and imbed them in the tahini with the points facing upward.
  4. Heat the oven to 180°C (360° F), and bake the Seniya for 15 to 20 minutes. Remove from the oven, and sprinkle with the set aside tomato seeds. Serve.

Tahini

100g tahini paste (3 ½ fluid oz)

120 ml (1/2 cup) of water

20 ml (1 ½ tbsps) lemon

Salt and black pepper, to taste

3 ripe Maggie tomatoes
