Preparation

  1. Heat the olive oil in a large skillet over medium to high heat.
  2.  Sauté the onions until soft and golden.
  3. Cut the cherry tomatoes into quarters and add to the onion. Continue to fry, stirring, until the tomatoes soften. About 10 minutes.
  4. Add the Redefine Beef and sauté over high heat, mashing the New-Meat™️ occasionally.
  5. When the New-Meat™️ colors, add all the spices and pine nuts. Mix well and sauté for an additional 5 minutes.
  6. Remove from the heat and allow the filling to cool before filling the bourekas.
  7. Place the cooled filling in a fine mesh strainer and allow any liquid to drain. This will ensure that the dough does not get wet.
  8. Preheat your oven to 190° C (375° F).
  9. Place a sheet of phyllo on a work surface, brush with olive oil.
  10. Place another sheet on top and brush will oil.
  11. Place a strip of filling along the longer edge of the phyllo sheets and roll into a tight log. Cut the log in half.
  12. Place the logs on a parchment-lined baking sheet.
  13. Repeat this process with the remaining phyllo sheets until all the filling is used.
  14. Generously brush the bourekas with olive oil and sprinkle with sesame seeds.
  15. Bake for 30 minutes or until golden.
  16. Remove from oven and serve.

35g (2 tbsps) parsley

25g (3/4 oz) pine nuts

200g (7 oz) cherry tomatoes

Olive oil for brushing

Sesame seeds for decoration
