Ingredients

Burgers

× 120g Redefine Premium Burgers (defrosted)
2
brioche burger buns*
2
American cheese*
2 slices
butter*
20g
vegetable oil
1 tbsp
Salt & cracked black pepper

Caramelised Onions

medium onion, thinly sliced
1
olive oil
1 tbsp
Pinch salt

Grilled Pineapple

fresh pineapple rings
2
vegetable oil
1 tsp

Big Kahuna Sauce

teriyaki sauce
2 tbsp
ketchup
1 tbsp

Method

Caramelise the Onions

Heat the olive oil in a frying pan over a medium-low heat. Add the sliced onion with a pinch of salt and cook for 12–15 minutes, stirring occasionally, until soft, sweet and golden. Remove from the pan and keep warm.

Grill the Pineapple

Lightly brush the pineapple rings with oil. Cook in the same pan or on a hot griddle for 2–3 minutes per side, until lightly caramelised with golden char marks.

Make the Sauce

Mix the teriyaki sauce and ketchup together in a small bowl. Set aside.

Cook the Burgers

Heat a griddle, BBQ plate or frying pan over a medium-high heat. Cook the Redefine Premium Burgers for 4–5 minutes per side, turning regularly until evenly caramelised.

During the final minute of cooking, top each burger with a slice of American cheese and allow it to melt.

Toast the Buns

Lightly butter the cut sides of the brioche buns and toast on the griddle until golden.

Assemble

Spread a little of the Big Kahuna sauce onto the base bun.

Layer with the Redefine Premium Burger, melted American cheese, caramelised onions and grilled pineapple.

Spoon over the remaining Big Kahuna sauce and finish with the toasted top bun.
