50–80ml

To Finish

spring onions, finely sliced
2
red chilli, finely sliced
1
crispy chilli oil
1 tbsp

1 tbsp
Fresh coriander (optional)

Method

Cook the Noodles

Bring a large pan of salted water to the boil. Cook the noodles according to the pack instructions. During the final 2 minutes, add the pak choi. Reserve 80ml of the cooking water before draining.

Cook the Lamb

Heat the vegetable oil in a large frying pan or wok over a medium-high heat. Add the Redefine Lamb Kofta Mix, breaking it up with a spoon as it cooks. Cook for 6–8 minutes until caramelised.

Add the garlic, cumin, smoked paprika and chilli flakes and cook for another minute until fragrant.

Make the Sauce

In a bowl, whisk together the tahini, soy sauce, sesame oil, honey and lime juice. Gradually add the reserved noodle cooking water until you have a smooth, silky sauce.

Bring Everything Together

Add the cooked noodles and pak choi to the pan with the lamb. Pour over the sesame sauce and crispy chilli oil and toss everything together until evenly coated and warmed through.

To Serve

Divide between two bowls and finish with sliced spring onions, fresh chilli, toasted sesame seeds and fresh coriander, if using.
