Method
Prepare the Onions
Using a mandolin or sharp knife, slice the onion as thinly as possible. Season lightly with salt and leave for 15–20 minutes to draw out excess moisture.
Squeeze dry using kitchen paper — this helps the onion caramelise quickly on the griddle.
Prepare the Burgers
Cut each 120g Redefine Premium Burger in half and gently roll each half into a loose ball. You will have four burger balls. Keep refrigerated until ready to cook.
Make the Burger Sauce
Combine the mayonnaise, ketchup, mustard, gherkins, hot sauce and black pepper in a bowl. Mix until smooth and set aside.
Cook the Burgers
Preheat a BBQ plancha, flat-top or cast-iron pan over a high heat. Lightly oil the cooking surface.
Place the burger balls onto the hot griddle. Divide the sliced onion evenly between the four burger balls. Using a burger press or sturdy spatula, firmly smash the onions into the burger until approximately 5–6mm thick. Season with salt and cracked black pepper.
Cook undisturbed for 3–4 minutes, allowing the onions to caramelise and the burger to develop a rich, crispy crust. Flip each burger, top with a slice of American cheese and cook for a further 1–2 minutes, until the cheese has melted.
Meanwhile, toast the burger buns cut side down on the griddle until lightly golden.
Assemble
Spread a generous spoonful of burger sauce onto the base bun. Top with two smashed onion cheeseburger patties and finish with the toasted top bun.
