½
garlic clove, finely chopped
½
fresh oregano, roughly chopped
5g
feta, crumbled (vegan alternative if preferred)
40g
olive oil
1 tbsp
Juice of ¼ lemon
Cracked black pepper

Method

Make the Flatbread Dough

Combine the self-raising flour and salt in a large bowl. Add the Oatly Plain Yoghurt and olive oil, mixing until a soft dough forms. Knead briefly until smooth, then cover and leave to rest for 10 minutes.

Prepare the Lamb Filling

Add the Redefine Lamb Kofta Mix, diced onion, preserved lemon and chopped oregano to a bowl. Season with cracked black pepper and mix well until evenly combined.

Make the Greek-Style Dip

Combine the olives, grilled courgette, grilled pepper, garlic and oregano in a bowl.

Fold through the feta, olive oil and lemon juice. Season with cracked black pepper and set aside.

Assemble the Flatbreads

Divide the dough into 4–5 equal portions and roll each into a circle approximately 15cm in diameter.

Place a generous spoonful of the lamb filling in the centre of each round. Bring the edges together to completely enclose the filling, pinching firmly to seal.

Turn over so the seam is underneath and gently roll into a flat disc approximately 12–14cm wide.

Cook

Preheat the BBQ to a medium heat. Cook the stuffed flatbreads for 4–5 minutes per side, turning regularly until golden, lightly charred and the filling is cooked through.

To Serve

Arrange the flatbreads on a serving board, tear or slice into wedges and serve with the rustic Greek-style dip for sharing.
