PREPARATION

For the Peppers: 

  1. Preheat oven to high heat (220°C/430°F). 
  2. Place peppers on a baking sheet and roast until skin is charred (about 20 minutes). 
  3. Remove from oven, let cool slightly, then peel and remove seeds. 
  4. Slice into strips and mix with vinegar, brown sugar, and garlic. Set aside. 

For the Beef: 

  1. Heat olive oil in a pan over medium heat. 
  2. Sauté onion and garlic until golden. 
  3. Add pulled beef and cook for about 8 minutes, stirring occasionally. 
  4. Season with salt and pepper. 
  5. Add mustard and balsamic vinegar, stir and cook for another minute. 

Assembly: 

  1. Mix mayonnaise with smoked paprika. 
  2. Split croissants lengthwise and lightly toast in a pan. 
  3. Spread the seasoned mayonnaise. 
  4. Layer with: arugula, roasted peppers, Redefine pulled beef.
    *Optional: add sliced Gouda cheese to taste.
