PREPARATION

  1. Make the Katsu Sauce: Heat oil in a shallow pan, cook onion, carrot, garlic, and ginger until soft. Add curry powder and flour, cook briefly. Gradually add stock, stirring, simmer until thickened. Add soya cream, soy sauce, and vinegar then blend until smooth, check seasoning.
  2. Cook the Chips: Cook fries according to pack instructions until crispy, toss with smoked paprika, curry powder, and salt, keep hot.
  3. Prepare & Cook the Redefine Beef Flank: Season the Redefine Beef Flank with salt and pepper. Coat: flour → egg wash → panko.
  4. Cook: Fryer: 170°C for 4–5 minutes OR Oven: 180°C for 12–15 minutes (turn halfway) until golden, crisp, and heated through.
  5. Assemble: Slice the Redefine Beef Flank, serve alongside chips, spoon over katsu sauce or serve on the side. Finish with spring onions, chilli, and a lime wedge.
