PREPARATION

  1. In a bowl, mix all the ingredients for the meat mixture until well combined.
  2. Cut the tortillas into squares.
  3. Layer the tortillas with a thin layer of the meat mixture, then another tortilla and another layer of meat, and so on until you’ve used all of them.
  4. Refrigerate the stack for 30 minutes to let it firm up.
  5. Slice the stack into 1-inch (3 cm) strips.
  6. Turn the strips on their side, group several together, and thread them onto skewers.
  7. Trim along the skewers to create even portions.
  8. Mix the olive oil with salt, pepper, and smoked paprika, then brush the mixture over the skewers.
  9. Grill for 3-4 minutes per side (or pan-fry) ,until golden brown.
