Redefine Meat Brined Beef Flank


Redefine Spice Blend

  1. Add all of the ingredients to a container.
  2. Fold together until thoroughly combined.
  3. Store in an airtight container until needed.

Redefine Brine:

  1. Add everything but the ice to a heat-proof container.
  2. Stir until the sugar and salt have dissolved.
  3. Add the ice and leave until completely melted.
  4. Use as needed or store in the fridge or freezer for later.

Brined Redefine Flank:

  1. Cut the flank into 3 100g pieces.
  2. Place in a vacuum pouch or container.
  3. Cover with the brine.
  4. Seal the pouch or container.
  5. Leave to cure in the fridge for 24 hours.
  6. Remove the flank from the brine and drain off the excess liquid.
  7. Use kitchen paper to gently press the pieces of flank to squeeze out most of the liquid.
  8. Leave uncovered to come up to room temperature.
  9. Heat the oil in a pan over a medium heat.
  10. Add the flan and cook on each side for 3-4minutes or until nicely caramelised.

1Kg Redefine meat Brine

50g EV Olive oil

Redefine Spice Blend

2 x Bay Leaves

1 tbs Mustard seeds

1 tbs Coriander seeds

1 tbs Whole black peppercorns

1 tsp Whole Allspice

1 tbs Fennel Seeds

8 Whole Cloves

Redefine Brine

100g Salt

50g Sugar

25g RDM Spice Blend

3 x Orange Zest Strips

5 x sprigs Fresh Thyme

1Kg Boiling Water

1kg Ice cubes
