PREPARATION

  1. Heat olive oil in a pan and sauté the zucchini, onion, and carrot for about 10 minutes, until golden and most of the liquid has evaporated. Let cool slightly. 
  2. In a large bowl, mix the mince beef with the cooked veggies and the rest of the ingredients until well combined. 
  3. Shape into nuggets and coat with breadcrumbs. 
  4. Place in an air fryer preheated to 200°C (390°F) and cook for 15 minutes, until golden and crispy.

Ingredients

2 tbsp olive oil

2 zucchinis, grated

1 onion, grated

1 carrot, grated

5 tbsp breadcrumbs (or almond flour for a gluten-free version)

1 tbsp sweet paprika

Salt and pepper, to taste

For coating: 1 cup breadcrumbs
