PREPARATION

  1. In a bowl, mix all the meat mixture ingredients until well combined. 
  2. Cut the tortillas into squares. 
  3. Layer tortilla, thin layer of meat, tortilla, meat until all are used.  
  4. Refrigerate for 30 minutes to firm up.  
  5. Slice the stack into 3cm strips.  
  6. Turn strips sideways, group several together and thread onto skewers.  
  7. Trim along the skewers for even portions.  
  8. Mix olive oil with salt, pepper and smoked paprika, then brush over the skewers.  
  9. Grill or pan-fry for 3 to 4 minutes per side until golden and browned.
