PREPARATION

  1. Spiced Lamb Kofta: In a bowl add the defrosted Redefine Lamb kebab mince, chopped onion, parsley, mint, cumin and sumac and mix to combine. Divide into 4 equal sized balls and then shape onto your metal / wooden skewers. *Alternatively, you can shape into small kofta’s / patties  
  2. Tabbouleh Salad: Add ingredients to a bowl and mix to combine, season with salt and pepper, check the balance of acidy.  
  3. Tahini Yoghurt: Add all ingredients to a bowl and mix to combine, adjust seasoning if needed.  
  4. Cooking / Assemble: Heat your BBQ or oven (to grill) to medium high heat, drizzle the skewers with some oil and season with salt and pepper. Place on the BBQ and cook for about 6-8 minutes until caramelized and cooked through. Brush the flatbread with some oil and char on the BBQ, remove. Serve with Tabbouleh salad and tahini yoghurt. Garnish with some fresh herbs and sliced onion (pickles)
