PREPARATION

Prepare the Kebab Skewers: 

  1. Heat a grill or grill pan to medium-high heat. 
  2. Thread the kebab mix onto the skewers. 
  3. Season the kebabs with salt and pepper. 
  4. Grill for 3-4 minutes per side, until they are cooked through. 

Make the Greek Salad: 

  1. In a large bowl, combine the tomatoes and cucumber. 
  2. Add the feta cheese and Kalamata olives. 
  3. Drizzle with olive oil and lemon juice. 
  4. Sprinkle with oregano, salt, and black pepper, then toss gently to combine. 

Prepare the Lemon Garlic Sauce: 

  1. In a small bowl, mix all sauce ingredients until well combined. 
  2. Refrigerate for at least 30 minutes before serving for the best flavour. 

Serve: 

Arrange the grilled kebab skewers on a serving plate, alongside the Greek salad, and serve the lemon garlic sauce in a separate bowl.

Kebab Skewers:

Wooden or metal skewers

2 tbsp olive oil

Salt and freshly ground black pepper, to taste

Greek Salad:

2 ripe tomatoes, diced

1 cucumber, diced

Kalamata olives

50g feta cheese, crumbled

2 tbsp extra virgin olive oil

1 tsp dried oregano

Juice of ½ a lemon

Salt and black pepper, to taste

Lemon Garlic Sauce:

1 cup mayonnaise

3 garlic cloves, finely chopped

1 tbsp fresh dill (or 1 tsp dried dill)

2 tsp grated lemon zest

1 tbsp fresh lemon juice

1/2 tsp sea salt

1/4 tsp freshly ground black pepper
