Redefine Burgers with Broccoli, Green Beans, Potatoes and Aioli


  1. Heat an oven to 180° C.  
  2. Make the aioli. Place the yolks, lemon juice and salt in a blender or food processorWith the motor running, drizzle the oil into the yolks until it is absorbed. Stop the machine and scrap down the sides. Add the dill and blend well. Scrape the aioli into a small bowl. Cover and refrigerate until ready to use. 
  3. Bake the vegetables. Line a baking pan with parchment. Cut the broccoli stems from the head; slice the florets into small pieces. Peel the stems and then dice. Place the broccoli, potatoes and green beans in a bowl. Toss with 3 tablespoons (45 g) of olive oil and season with salt and pepper.  
  4. Spread the vegetables on the prepared pan, place in the oven and roast for 20-30 minutes until they have colored and are golden. 
  5. Prepare the Redefine Premium burgers. Heat 2 tbsp. of oil in a large skillet or frying pan over mediumhigh heat. Cook the burgers for 6 min in a covered pan, flipping them from time to time, until they are nicely browned and cooked through. Add on top a pinch of salt and coarsely ground black pepper. You may refer to the cooking instructions found on the product packaging as a guide. 
  6. Arrange the cooked burgers and roasted vegetables on a platterServe accompanied by the aioli.

1 head (400 g) of broccoli

1 cup (125 g) green beans, trimmed

2 medium (280 g) potatoes, quartered

1/3 cup (70 g) olive oil

Salt and coarsely ground pepper, to taste

For the Aioli:

2 large egg yolks*

1 clove of garlic, finely grated

2 tbsps. (30 ml) lemon juice

2 tbsps. (7 g) fresh dill, chopped

1 ½ cups (320 g) olive oil

Pinch of salt

*To make the recipe vegan, replace the egg yolks with ¾ cup (175 ml) unsweetened soy milk.
