1. Heat the olive oil in a skillet or sauté pan over medium/high heat.
  2. Add the thyme, spices and Redefine Pulled Lamb, lower the heat and cook, stirring, for 5 minutes.
  3. Slice the Ciabatta horizontally and spread each half with mayonnaise and mustard.
  4. Layer the bottom half of the Ciabatta with sliced tomato, onions and lettuce.
  5. Mound the prepared new-meat on the sandwich and top with the second half of the ciabatta.

45g (1 ½ oz, 3 tbsps.) mayonnaise

15g (1/4 oz, 1 tbsp.) mustard


1 medium tomato, sliced

70g (2 ½ oz) ½ an onion, thinly sliced

25g (1 oz, 2 tbsps.) olive oil

2 sprigs of thyme

4g (1/4 oz, 1 tsp.) ground cumin

A pinch of salt

A pinch of pepper
