PREPARATION

  1. Prepare the mash. Peel and cube the potatoes. Place them in a pot and cover with water. Bring the pot of potatoes to a boil and then lower the heat to a simmer. Cook the potatoes till they are soft and are easily pierced with a fork.
  2. Strain the potatoes and return them to the pot. Carefully cook them over low heat, for a few minutes, to dry out. Remove from heat and pass through a food mill of mash by hand.
  3. Stir in 30 g of butter and season with salt, to taste. Keep warm.
  4. In a sauté pan melt the remaining 30 g of butter, add the pepper, chili and paprika and cook for one minute.
  5. Add the peas and continue to cook till the peas have softened. Remove from heat and keep warm.
  6. Prepare the Redefine Pro Bratwurst sausages according to the instructions on the package.
  7. Plate the sausages on a bed of mash. Spoon the peas with their sauce on top and serve.
