PREPARATION

  1. Prepare an ice water bath in a medium bowl.
  2. Batonnet the potatoes and soak in the ice water for half an hour.
  3. Fill a pot with water and a teaspoon of salt. Bring to a boil.
  4. Remove the potatoes from the ice water bath with a slotted spoon, and transfer to the pot on the boil. Retain the ice water bath.
  5. Cook the potatoes for 10 minutes.
  6. Strain the potatoes and shock them in the ice water bath. Strain and dry well on paper toweling.
  7. Fill a pot or deep fryer with oil and heat to 180° Initially fry the dried potatoes for a few minutes in the hot oil, until they start to color. Remove and allow them to drain for 3-4 minutes on absorbent paper toweling.
  8. Return the precooked fries to the hot oil and continue to cook till they are a deep golden brown. Remove from the oil, drain and toss with salt.
  9. Prepare the Redefine Pro Bratwurst sausages according to the instructions on the package.
  10. While the sausages cook, mix the ketchup and the curry powder in a small bowl.
  11. When the sausages are done, slice them in half, plate, accompanied with a side of chips. Smother with curried ketchup. Serve.
