PREPARATION

  1. Divide evenly and then fill the pita halves with Kofta mix. 
  2. Oil and heat a grill to medium-high. 
  3. Place the stuffed pitas on the grill and cook 5 minutes a side, until golden brown. For help, refer to the package instructions. 
  4. As the pitas cook, grill the tomatoes, red onion and green chilis for 10 minutes. Remove the vegetables from the heat, cool and roughly chop.
    Season the chopped vegetables with salt, coarsely ground black pepper, a drizzle of olive oil, and freshly squeezed lemon juice. 
  5. Place two pita halves on each plate. Top with a spoonful of mixed grilled vegetables.  
  6. Serve with tahini or garlic sauce.

1 cup (240 ml) homemade or commercially prepared tahini or garlic sauce
