PREPARATION

Make the Aioli:

  2. While blending, slowly drizzle in the olive oil until thick and creamy. Add water if needed for a smoother texture. 
  3. Refrigerate until ready to serve. 

Cook the Burger: 

  1. Heat a pan over medium heat. 
  2. Cook the burgers for about 5 minutes per side, until golden and cooked through. 

Assemble the Tortilla: 

  1. Cut a slit halfway up each tortilla. 
  2. On one quarter, place the cooked burger. On the next, spread aioli. Arrange lettuce, tomato, pickles, and onion in the third and fourth quarters. 
  3. Fold each quarter over the next to form a triangle. 
  4. Sear the folded wrap in a hot pan for 1-2 minutes per side until crispy.
