Preparation

The Filling

  1. In a pan, heat the oil and sauté the onion, garlic, and hot pepper until golden.
  2. Add the Redefine Beef and continue to cook until browned.
  3. Add the cumin and season with salt and pepper.
  4. Add the tomato paste and a bit of water, and cook for an additional minute.
  5. Remove from the heat and keep warm.

The Red Rice

  1. Soak the rice for about half an hour in cold water and strain well.
  2. In a small pot, fry the rice in a little oil for about 5 minutes.
  3. In a liter (4 cup) container, mix together the tomato polpa, water, tomato paste, and spices.
  4. Pour the spiced liquid into the pot with the rice and bring to a boil.
  5. Cover the pot, lower the heat to a simmer, and cook for 10 minutes.
  6. When cooked, remove from heat and hold.
  7. Assemble the burritos.  Place the tortillas on a work surface. Fill each one with red rice, New-Meat™️, and beans. Finish with lettuce and avocado. Roll each tortilla into a wrap and serve.

250g (9 oz) Redefine Beef

20g (4 tsps) olive oil

60g (2 oz) red onion

2 cloves of garlic, minced

½ a chili pepper

Salt and pepper to taste

5g (1 tsp) ground cumin

50g (1 ¾ oz) tomato paste

Hot water

The Red Rice

15g (1 tbsp) canola oil

200g (1 cup) rice

150g (5 ½ oz) tomato polpa (canned finely chopped tomatoes)

150g (5 ½ oz) water

50g (3 tbsps) tomato paste

5g (1 tsp) sugar

5g (1 tsp) salt

Pinch of chili powder

Pinch of sweet paprika

Garnish

1 avocado, sliced

200g (1 cup) cooked black beans (you may use canned)

Shredded lettuce
