Redefine Sloppy Joe

PREPARATION

  1. Heat 2 tablespoons of olive oil in a large skillet or frying pan over medium-high heat. Add the Redefine Beef Mince and brown, stirring, separating any clumps of mince. Cook for 4 minutes. You may refer to the cooking instructions found on the product packaging as a guide. 
  2. Remove the cooked mince from the heat and strain to remove any liquid. Set aside.
  3. For the tomato sauce, wipe the skillet clean and return to the stove. Add 2 tablespoons of olive oil and heat over medium heat. Add the onion and both types of pepper, cook for 3 minutes until soft. 
  4. Add the garlic and continue to cook for one minute. Add the Redefine mince and tomato paste, stir. Mix to well combined. 
  5. Add the ketchup, water, brown sugar, mustard, chili powder, Worcestershire sauce, salt and black pepper. Mix well to combine. 
  6. Simmer the mince over medium/low heat until it thickens, about 10-15 minutes. 
  7. Build your Sloppy Joes. Slice the hamburger buns in half and lightly toast. Spread the sliced buns with mayonnaise. Place the bottom of a bun on a plate and mound with a generous portion of Sloppy Joe mixture. Drizzle with hot sauce. Layer the other half of the bun on top. 
  8. Serve with a side of mixed greens and sweet potato fries.

1 package Redefine Beef Mince (250 g)

4 tbsps. (68 g) olive oil

1 onion (150 g), diced

1 red bell pepper (150 g), diced

1/3 of a green serrano pepper (3 g), seeded and minced

2 small cloves of garlic (6 g), minced

3/4 tbsp (11 g) tomato paste

1/2 cup (112 g) ketchup

1/4 cup (56 ml) water

3/4 tbsp (11 g) brown sugar

3/4 tsp (4 g) mustard

1/2 tsp (2 g) chili powder

1/3 tsp (1.5 g) Worcestershire sauce

1/3 tsp (1.5 g) salt

1/4 tsp (0.75 g) ground black pepper

3 tbsps. (45 g) mayonnaise

3/4 tsp (3.5 g) hot sauce (sriracha, Tabasco)

4 Hamburger buns

Tossed greens in vinaigrette

Sweet potato fries

*To make the recipe vegan, use soy or vegan Worcestershire sauce and vegan mayonnaise.
