Preparation:

  1. Make the guacamole. Peel the avocado, place in a bowl and mash till smooth. Add the chopped white onion and juice of half a lemon (15g, 1 tbsp.). Stir to combine. Cover with plastic wrap and refrigerate till ready for use.
  2. Heat the olive oil in a sauté pan or skillet over medium/high heat. Add the red onion and sauté till soft and translucent.
  3. Add him paprika, cumin, salt, pepper, and minced garlic. Stir to combine and cook till fragrant, about one minute.
  4. Add the Redefine Pulled Pork, stir. Continue to cook for another 2-3 minutes, to ensure that the new-meat is thoroughly cooked and evenly coated with the seasoning. Remove from heat and keep warm.
  5. Place the Nachos/Totopos on a serving plate and layer with the seasoned new-meat. Scatter the quartered cherry tomatoes and the sliced jalapeno on top. Sprinkle with coriander leaf. Serve accompanied by limes and hot sauce.
